Delicious Lucuma Ice Kream

This recipe was featured in the Raw Pleasure newsletter and is from Ani Phyo’s book Ani’s Raw Food Kitchen:

Lucuma Ice Kream

A rich creamy gelato-like ice cream popular in South America, this flavor is reminiscent of caramel. You don’t need an ice cream maker to enjoy this recipe. Just blend and freeze. Super fast and easy. As always, this recipe is gluten free, wheat free, sugar free, dairy free, and good for you!

Makes 2 cups

1/2 cup Lucuma Powder
1 cup Cashews
1 Tablespoon Vanilla Powder (or vanilla bean/extract)
1/4 cup Yacon Syrup
1 cup filtered water

Blend all ingredients until smooth and creamy
Freeze

Yum!

Hi Leisa,
Can I use yacon powder instead of yacon syrup in the lucuma ice kream recipe?

You may be able to – I’m not really a raw food chef, so I think it might be a little trial and error to ensure the right consistency.. If you don’t have yacon syrup, then raw honey would be fine if you are not a vegan, or some coconut syrup. Good luck with it!
