Guilt Free Deliciousness Part 2

Welcome to part 2 of the delicious, and guilt free desserts! As a kid, a common treat at parties were Chocolate Crackles – full of sugar and Copha and all sorts of nasties, but here is a recipe for Weird Chocolate Crackles, which mysteriously taste very similar – and they are guilt free!

Weird Chocolate Crackles

2 TBS organic extra virgin coconut oil
2 TBS cacao liquor or cacao butter
2 TBS organic raw cacao powder
1 tsp vanilla essence
A pinch of Himalayan salt
Xylitol or stevia- as much as needed
Shredded or flaked organic coconut- lots

Melt the oil and cacao liquor/cacao butter in a metal pan or bowl over a saucepan of boiling water.

Once everything is melted add in your salt, raw cacao, xylitol and vanilla. Stir this all together until smooth.

Then add lots of coconut! Make sure you coat the coconut well with the liquid chocolate.

Transfer this mix into love heart ice cube trays (courtesy of your roommate) and put in the freezer for at least 30 mins.

I call them weird chocolate crackles cause they shouldn’t really taste like chocolate crackles as they have no rice bubbles or copha, but somehow they do!!! That being said you can modify this recipe any way you like. You can add organic puffed rice or millet or buckwheat, nuts, cinnamon, chilli powder, peppermint oil, cacao nibs, whatever you desire!!!! Goji berries would be awesome too!

You do need to keep them in the freezer cause they will melt above 22 degrees or if you hold them too long. But they have no chance of melting when  I’m around!!!!

Is it still guilt free do you think, if I eat half the tray??
