This Raw Food Preparation Intensive is a four night / three full day retreat, where you will learn kitchen skills and preparation techniques for creating fantastic, gourmet raw and whole food recipes. Perfect for the home chef or total raw food newbie, you will be working with acclaimed executive chef Cat Cannizzaro (who has been trained by a Michelin Star Restaurant Chef) and is regarded as one of Australia’s leading raw food chefs.
You will learn an incredible array of recipes and techniques, as well as learning about the concepts of Food as Medicine and the nutrition behind the ingredients, with Leisa Ravenscroft N.D., leading Australian Naturopath and founder of Embracing Health.
Held in beautiful Byron Bay, you will take part in two, three-hour comprehensive food preparation classes per day – it will be completely hands-on – you will be participating in groups of three and will be involved in every stage of the meal creation. In between these classes you will have time to explore the surroundings and stunning beaches. In addition there will be food lectures and discussions in the evening, helping you with all aspects of recipe creation.
Your menu for the weekend is also your course, the premise is that everything you eat and enjoy, you will be learning to create. Recipes and notes provided.

You will learn breakfast, lunch, dinner, snacks, juices and smoothies, and of course dessert! As well as life-long kitchen skills such as knife handling, sprouting, making nut milk, dehydrating and recipe creation!
If you go to a health retreat in Byron Bay, chances are it is being held at Tallow Beach Houses – and this is where we will be staying for the food preparation intensive. Set in a private 30 acre nature sanctuary, Tallows enjoys 630m of amazing beachfront, with cycling tracks, sauna, and that refreshing dip in the ocean only steps away!
Accommodation will be triple share in cottages with two bedrooms and one share bathroom. One room is set up as a twin share, and the other room is a queen – it will be first in-best dressed for bed allocation, and we aim to match the guests with those of similar age and interests! The cottages have large outdoor decks, some overlooking a lake and all with the soothing sounds of the surf to fall to sleep by. Tallows enjoys one of the most relaxed atmosphere’s of any of our retreats, being situated in the most beautiful natural setting.
Please note that there is no swimming pool or spa at Tallows – swimming is in the mangificent ocean!
